Salmon is a favourite, and can be used in endless combinations. I like it raw, slightly grilled, in soup, as a main, and very much on top of a salad. This Salad gives you all the crunch, taste and tang you want. I vary it according to what I have at home, and it always makes me Feel Good afterwards.

Ingredients
100gSalmonmarinated, Grav lax
50gPomegranate seeds
400gSpinach
100gIceberg Lettuce
50gRed Cabbage
50gRed Onion
50gCarrotsgrated
2-3sprigs of Parsley
1TablespoonLemon Juice
2TablespoonOlive Oil
1TeaspoonMustardI used Dijon Mustard
1TeaspoonHoney
SaltPeppar to taste
Instructions
Dressing
Mix lemon juice, olive oil, mustard, honey, salt and pepper in a large bowl.
Salad
Chop onion and red cabbage. Add them to the bowl so they can absorb the dressing.
Add the grated carrots, iceberg lettuce and spinach.
Add the pomegranate seeds by giving the fruit a good 'thwack' so the seeds fall into the bowl as red jewels.
Mix it all together and add the chopped parsley on top.
Finally - Top it with Salmon that you have cut into long strips.
Notes
Great tip: Add the onion, and red cabbage to the dressing a good five minutes before you add the rest. The dressing gets absorbed by them which really improves the overall taste later.
