Ingredients
Black Bean Meat Sauce
400gBeefcut carpaccio style or pounded thinly then chopped.
400gBlack beans1 tin Organic is best
1Onion largechopped
1Carrotgrated
1Celery stickgrated
400gTomato1 tin or even better 'passata'
2Garlic cloveschopped
1Chillichopped
1Table spoon of Taco spice blendsee above or more if you want
Coriandera small bunch, chopped
2tspHoney
500gwater
Salt and Pepper to taste
Salsa
1Cucumbersmall to medium, diced
2Oniondiced
500gTomatoesfresh (of course), diced
1/2Bell pepperred or yellow, diced
Corianderas much as you like (we like it a lot!)
1tspTaco Spice blendor more if you like
1Garlic clovediced
1Chillidiced
1Limejuiced (you need 3 Tablespoons)
Salt and Pepper to taste
Guacamole
1Avocadodiced
2Table spoons of Salsasee recipe
Instructions
Meat Sauce - How To Make It
Chop the onion and the carpaccio slices of beef into dice and set aside.
Grate the carrot and celery stick, then chop the garlic and chilli.
Take out a skillet pan, and add garlic, chilli, onion, carrot, celery, taco spice blend and diced meat. Let it all get properly caramelised and browed.
Add Tomato passata (or tin) and let it cook together for a good 5 minutes. Add coriander, salt, pepper and honey.
Now add the black beans and allow it all to cook together. If it becomes too thickish add water - a little at a time - and taste.
Let cook on a slow heat for another 10 minutes.
Salsa
Juice the lime, add taco spice blend, salt, pepper, chilli, garlic and coriander.
Chop cucumber, onion, tomatoes, and bell pepper.
Take a bowl and mix it all together. Cover with clingfilm, and refrigerate for approx 15 minutes (or more if you have patience)
Guacamole
Dice the Avocado and add 3 table spoons of your salsa. Mix until properly combined, and desired consistency (some like it less, some more - right?)
Serve up family style
Enjoy serving in small bowls, and grate some hard sheep's cheese on the side (if you want it) as this is easier for the digestion for someone with dairy intolerance.
