1Red Onion
1Pear
50gramBaby Spinach
30gramWalnuts
30gramFeta Cheeseoptional
Dressing
1TspOlive Oil
2tspBalsamic Vinegar
1tspHoney
Pinchof Cinnamon
Pinchof Nutmeg
Za'atar to tasteoptional — adds fab flavour!
Salt and Pepper as per taste
Instructions
For The Salad
Take out a bowl, and prepare your dressing. Use the spices to you taste, but go sparingly on the salt as it can take over easily.
Chop the Onion in slices, and roughly cut the Radicchio into shreds.
Cut your Pear into long slices (approx. 1 cm thick)
Add the vegetables and pear into your bowl and mix throughly with your hands (they are such good tools, right? :) )
Cooking Process
Heat up a griddle pan, and add the content of your bowl.
The Radicchio and Pear mix will shrivel and liquify in its own juices helped by the balsamic honey dressing that now turns sticky. After about 5 (five) minutes the warm salad is ready to be placed on a bed of Baby Spinach.
Final Flourish
Place the Baby Spinach on a serving plate, and spoon your warm salad on top.
Add the walnuts.
Now you can choose to grate Feta Cheese on top - or not if you are non-dairy, vegan or just prefer not to.
Enjoy
