This recipe is easy. Fish, summer vegetables with warm tones of turmeric and nutmeg. Chop, place in the oven, wait for 20 minutes while you enjoy a leisurely summer drink - then just enjoy!

Recipe Fish in a Dish with Summer Vegetables, Turmeric, Nutmeg and Lemon

Summer is a time of vegetable abundance. It is almost a shame to do anything to them. Eating them raw in salads or Juicing is what tends to happen most. When I do cook however, I want it to be simple, tasty and healthy. This recipe came about as my zucchini suddenly started to produce more than usual — at the same time as my neighbour caught a nice fish. We enjoyed this fish dish with a green salad, but if you have guests you can also try it with my coleslaw with zingy saffron dressing. Enjoy!

Fresh Fish, Summer Vegetables, Turmeric, Nutmeg, Chilli and Garlic make this a Dish to remember. Chop, Place in Oven for 20 minutes is all it takes. Easy, and So Tasty! Try It!

Ingredients

  • 500 grams of Fish fillet
  • 2 small Zucchini Courgettes
  • 3 ripe Tomatoes
  • 2 small Fennel
  • 1 Onion
  • 1 Carrot
  • 1 stalk of Celery
  • 1 Tsp Olive Oil
  • Juice of 1/2 Lemon
  • 1 fresh Chilli optional
  • 1 clove of Garlic
  • 1 tsp Turmeric
  • 1 tsp Nutmeg
  • Salt and Peppar to taste

Instructions

  • Set Oven to 200 degrees Celcius, and lightly oil an oven dish;
  • Take out a bowl. Add Olive Oil, Lemon Juice,Turmeric, Nutmeg, Chilli, Garlic, Salt and Pepper;
  • Chop all the Vegetables into bite size pieces - setting aside 1 tomato in slices to top fish with later;
  • Add the Vegetables into the bowl and mix thoroughly.
  • Take your Vegetable spicy mix and pour into the oven dish;
  • Place Fish on top and cover with tomato slices;
  • Cook for 20 minutes in 200 degrees Celcius.
  • Enjoy!

Notes

If you choose to have chicken instead of fish, I recommend frying off the chicken first in a pan, to then add it to your vegetables. You will also need to adjust the cooking time to about 30 minutes - making sure to check that it is well cooked through before taking it out.
Of course any summer vegetables that you have will work with this dish - just use what is in season and enjoy this easy, summer breezy dish that comes with warm spicy tones of turmeric and nutmeg. Yum!
