Salmon & Pomegranate Salad
Serves 2
Salmon is a favourite, and can be used in endless combinations. I like it raw, slightly grilled, in soup, as a main, and very much on top of a salad. This Salad gives you all the crunch, taste and tang you want. I vary it according to what I have at home, and it always makes me Feel Good afterwards.

Ingredients
  1. 100 g Salmon (marinated, Grav lax)
  2. 50 g Pomegranate seeds
  3. 400 g Spinach
  4. 100 g Iceberg Lettuce
  5. 50 g Red Cabbage
  6. 50 g Red Onion
  7. 50 g Carrots (grated)
  8. 2-3 sprigs of Parsley
  9. 1 Tablespoon Lemon Juice
  10. 2 Tablespoon Olive Oil
  11. 1 Teaspoon Mustard (I used Dijon Mustard)
  12. 1 Teaspoon Honey
  13. Salt, Peppar to taste
Dressing
  1. Mix lemon juice, olive oil, mustard, honey, salt and pepper in a large bowl.
Salad
  1. Chop onion and red cabbage. Add them to the bowl so they can absorb the dressing.
  2. Add the grated carrots, iceberg lettuce and spinach.
  3. Add the pomegranate seeds by giving the fruit a good 'thwack' so the seeds fall into the bowl as red jewels.
  4. Mix it all together and add the chopped parsley on top.
  5. Finally - Top it with Salmon that you have cut into long strips.
Great tip
  1. Add the onion, and red cabbage to the dressing a good five minutes before you add the rest. The dressing gets absorbed by them which really improves the overall taste later.
